Field Marrow Curry




1 medium size Field Marrow (FM)
(cut into 1 inch cubes, slit them as seen in pic. Do not peel off the skin. Just wash from inside/outside and remove the seeds.
In a vessel, add these FM’s and pour as much water just to cover them. Add a small pc of jaggery and salt to taste and cook until they are half cooked. We need to add the following masala*.
*Masala preparation
1 big onion, 3 to 4 long red chili’s, ½ Tspn jeera, 4 to 5 corns of pepper, ½ Tspn turmeric, 1 pinch of mustard, 1 Tbspn of coconut grated(optional). Grind all the above to a fine paste adding sufficient water.
Add the masala onto the half cooked FM’s and cook for 2 mnts.
For seasoning:
In coconut oil, add ½ Tspn mustard seeds, when they crackle, add a sprig of curry leaves, 4 to 5 flakes of garlic slightly crushed ( do not peel the skin). Pour this as seasoning on to the dish.
