In oil, splutter mustards & 1/2 tspn moong dal, curry leaves, 1/2 onion, 3 flakes garlic,1 green chill. Fry till it turns brownish. Add finely chopped beetroot leaves along w/its stems & 1/2 tomato & cook for a while. Add salt and small pc of jaggery. Now add the boiled beetroot( we pressure cooked for 5 mnts). Now add sambhar powder. Stir well and finally add 2 tbspn grated coconut and cook for another mnt. Enjoy this delicious dish
