RICE WHEAT PILAF




Ingredients:

Ghee- 1 Tbspn
Basmati Rice- ¾ cup
Warm Water - 2 cups ( Alternate to water can be vegetable stock)
Spinach- ½ cup finely chopped
Whole Wheat- ¾ cup
Mint Leaves & Pomegranate - For garnishing.
Salt- 1 Tspn ( if stock used then only ½ Tspn)

Method:

• Wash the whole wheat thrice and soak in water for about 4 hrs in a heavy bottom vessel.
• Cook the whole wheat with the same water used for soaking in the same vessel w/½ tspn salt. (This water should be 3” to cover the Wheat). Once cooked, drain the water and keep aside.
• In a vessel, pour the Ghee, add the Basmati rice and fry them well (rice should be pre-soaked for ½ hr.)
• Add 2 cups of warm water(or Stock) in to this and cook until the rice absorbs the liquid. Add ½ tspn of salt to this(if only stock is not used)
• Add the spinach, mix well for about a minute.
• Now add the drained whole wheat and mix well.
• Garnish with Mint leaves and Pomegranate
