PORK BAFAT




Ingredients:
Pork-1.5Kg
Onions-1kg
Garlic 1 1/2 pods,
Ginger 2 Sq Inch,
Green Chili-2 to 3 pcs
Tamarind-size of a lemon.
Salt to taste.
Dry Ingredients:
Cloves-10, Cinnamon leaves-3 (or Bay leaves), Cinnamon stick-4
Kashmiri chili's- 20pcs,
Coriander seeds- 2 Tspn
Cumin seeds- 1 Tspn
Turmeric powder- ½ Tspn
Pepper corns-10
Method:
Cut the pork into 1" cubes & add 1/2 Tspn of turmeric powder, salt & 2 to 3 Tspn vinegar. Marinate for 1hr.
In a low fire, cook this w/onion cubes + garlic cut into 2 pcs + finely chopped ginger.
Make a powder of all dry ingredients and add this to the meat. Add salt+ cinnamon leaves + green chili (slit the chili). Cover and cook for a while. In hot water, soak the tamarind, strain and separate the pulp and add only the juice to the meat & cook well until the fat oozes out. Add 2 Tspn of sugar for the taste (optional). Good to go w/sannas, Nan's.
