Ingredients:
Beef- 1kg cut into medium size pcs.
Jeerakasala Rice- 2 ½ Cups
Tomato- 3 finely chopped
Onions- 4 med size
Garlic- 5 cloves finely chopped and crushed
Ginger- 2 inch finely chopped and crushed
Garam Masala- 1 ½ Tspn (make a powder of Badi Shep, cumin, star anise, cloves, cinnamon, bay leaves, cardamom+ Mace)
Green Chili- 5to 6 pcs chopped
Ghee- ¼ cup( for Rice)
Oil-3 Tbspn or more (for frying Onions)
Coriander Leaves- 1 big bunch
Mint Leaves- handful
Rose water- 2 Tspns
Cashew Nuts+ Raisins- as per your liking
Saffron- 1 or 2 pinches mixed in little water
Method:
In a pressure cooker, cook the meat with little salt in sufficient water till tender ( about 10 mnts- depending on the meat quality) Set this aside. Keep aside the gravy as well for later use.
Fry Onions in oil until golden brown & crispy. Remove and set aside.
In the same non-stick vessel that you fried the onions, add tomatoes, ginger, garlic & chili’s and fry for a while.
Add the meat now followed by mint leaves.
Add the gravy from the pressure cooker. Close the lid of the vessel and cook for a while or as required. Note that the meat is pre cooked.
Add the fried onions( about 80%).
Add garam masala powder and the coriander leaves. Mix well. The masala for the biryani is ready.
