JACKFRUIT STEAMED CAKE IN TEAK LEAF




Ingredients:

Red raw rice- 2 ½ cups
Cocount grated -1/2
Jackfruit ripe- 15 pcs
Jaggery- as per your taste
Pepper crushed (optional)
Teak leaves
Pinch of Salt

For filling ( Method 2)
Grated coconut- 1 ½ cups
½ cup jaggery
½ Tspn Cardamom powder

Method - 1
Wash and soak the rice overnight ( or atleast 4 to 5hrs).
Grind rice along w/ coconut, jackfruit. Make sure it turns out to be a thick batter.
You may add crushed pepper(optional) and salt.
Keep the steamer ready with the boiling water. in it Pour enough batter on the teak leaf and wrap as seen in the picture.
Line the steamer with the teak leaf or banana leaf and place the wraps on them. Cover the lid and let it steam for ½ hr or more.
Insert a toothpick to check if done. By this time the colour of the leaves will turn to redish.

Method - 2
Wash and soak the rice overnight ( or atleast 4 to 5hrs).
Grind rice along w/jackfruit & salt. Make sure it turns out to be a thick batter.
Make a preparation of filling w/coconut, jaggery & cardamom powder.
Keep the steamer ready with the boiling water in it. Spread the batter on the teak leaf and pour some filling and cover w/more batter on top. Gently wrap them into a packet shape.
Line the steamer with the teak leaf or banana leaf and place the wraps on them. Cover the lid and let it steam for ½ hr or more.
Insert a toothpick to check if done. By this time, the colour of the leaves will turn to redish.
