Ingredients:
-2pc Chicken Breast
-1 med size onion finely slized
-4 flakes of Garlic finely chopped
-Small pc of ginger finely chopped
-2 Green chili’s slit into half lengthwise
-1 big Tomato
-2 Tspn coriander leaves
-1 cup thick coconut milk
-Stew powder (powder 3 Tbspn pepper corns, 1Tbspn cumin seeds, 6 cloves, 2 pcs cinnamon sticks, ½ Tspn turmeric powder, 2 petals of anise)- Use powder as required in the dish(minm of 2 Tspn)
-Vegetables- Zucchini/Carrot/Green peas…
-Salt to taste
-Oil/Ghee for frying
Method:
In oil & a little Ghee, fry onions, ginger, garlic, chili for abt 2 mnts.
Add chicken pc and tomato and keep frying for another 2 to 3 mnts. Add a cup of water and salt. Now you may add the hard vegetables (like potato/carrot). When the chicken is almost cooked, you may add zucchini, green peas. Add the stew powder and give a boil.
Finely add the thick coconut milk and cook for another minute and turn of the gas.
Garnish with coriander leaves
For Vegetarians- You may skip the chicken and try the same recipe.
