1 bunch methi leaves washed and chopped
½ cup sprouted moong
1 med size onion finely chopped
1 Tomato finely chopped
Small pc of ginger chopped
4 cloves of garlic
Make a fresh powder w/ foll:
2 red chili’s
1 Tspn coriander seeds
½ Tspn Cumin seeds
Additional Ingredients:
2 Tbspn of Oil
2 pinch of Fenugreek seeds
¼ Tspn of Mustard seeds
2 Tbspn of jaggery
1 Tbspn of grated coconut ( Optional)
Salt to taste
Method:
In a heavy bottom vessel, add oil and throw in the mustard, when crackles, add fenugreek seeds, onions, ginger + garlic.
Cook till the onions turn translucent, add the prepared powder and fry for a while. Add the chopped methi leaves and tomatoes.
Fry for ½ minute and add the moong. You may now add the grated coconut if reqd. Add ½ cup water. Add salt and jaggery and cook for 2 mnts or as desired.
