Ingredients:
½ Kg Mutton
800gms Spinach chopped
1 big onion chopped
1 Tspn Ginger garlic paste
1 big tomato finely chopped
½ Tspn each powder of coriander, cumin, garam masala, red chili
¼ Tspn of Turmeric powder
Ghee and Oil- 1 Tbspn each
Ginger Juliennes for garnishing
Salt to taste
Method:
Clean, wash and drain the water from the mutton and keep aside.
Boil spinach w/ 50ml water and a pinch of salt and grind to a smooth paste when it is cool.
Heat oil and ghee in a Pressure cooker. Fry onions till golden brown.
Add ginger garlic paste and all the powders
Fry for 2 to 3 mnts and add the tomato and cook till the oil separates
Add mutton and mix well until the masala is well coated and let it cook for 7 mnts
Add 1 cup of water and salt and cover the lid of the pressure cooker and cook for 2 whistles ( depends of the quality of the mutton)
Allow the cooker to cool on its own before opening.
Add the spinach paste to the cooked mutton and simmer on low heat for few mnts(or till it boils)
Garnish w/ginger juliennes
